Bruschetta

Bruschetta is essentially italian bread, toasted with olive oil, and topped with something light (and preferably garlic-y!). 

Bruschetta is an easy fix to appease rumbling bellies while you’re preparing an elaborate meal. 

Here are a couple of great toppings:

– Fresh Tomato Basil –

3 cups diced Tomatoes

1-3 cloves minced Garlic
1 cup chopped fresh Basil
3 tablespoons Olive Oil
2 tablespoon Red Wine Vinegar
Salt to taste
12 -15 pieces of french or italian baguette slices

Brush the bread slices with olive oil and toast in the oven at 350˚ for 10-15 minutes. 

Toss the remaining ingredients together and mound onto each toast.

– White Bean –

2 cans White Beans, rinsed and drained (or leftover from a soup, perhaps)
2-4 cloves minced Garlic
2 tablespoons fresh Oregano
¼ cup minced Parsley
6 tablespoons Olive Oil
3 tablespoons White Wine Vinegar
Salt to taste
12 -15 pieces of french or italian baguette slices

Brush the bread slices with olive oil and toast in the oven at 350˚ for 10-15 minutes. 

Toss the remaining ingredients together and mound onto each toast.
